Recipe

Spicy Orange and Mountain Mint Iced Tea

“Chilli is to warm, Mint to freshen the breath and herbs & spices are to balance the body”

Yield: 4 litres

2 litres fresh pressed orange juice - step 1
3 litres water - step 2
1 piece red chilli (rough cut)
2 pieces lemongrass
10 grams sage
10 grams oregano
40 grams fresh or dried mountain mint tea
10 grams lemon balsam tea
100 grams organic honey
2 sticks cinnamon - step 3
2 whole limes (cut in half)

Step 1 -
· Boil the orange juice until half reduced
· Strain to remove all sediment

Step 2 -
· Combine all ingredients and bring to boil
· Taste to ensure chilli does not become to strong
· Remove from heat once taste is established and all honey is combined
· Strain and return to clean pot

Step 3 -
· Add in the orange juice to the tea solution
· Add final ingredient and mix together.

Allow to cool overnight in a sealed container. The flavour can be strengthened and softened by adding ice and fresh lemon juice.  Garnish with fresh garden herb or lemongrass stick.
